Coffee trailer setup: power, water and equipment

A coffee trailer is simpler than a cooking trailer, with no hood or fire suppression for grease, but power and water have to be planned around the espresso machine.

License type

DSHS lists coffee trucks and snow cone vendors as examples of Type II mobile food vendors. Type II costs $618 plus a $400 pre-licensing inspection. See the DSHS license guide.

Power

  • Commercial espresso machines with two or more groups usually run on 240V and need their own circuit. Check the machine's nameplate and match the breaker and outlet to it.
  • Give the grinder, shaved ice machine and refrigeration their own 120V circuits so they do not trip each other.
  • Use a weather-rated power inlet (50 amp is common) for a generator or site power; Houston fire inspectors do not accept double-male cords.
  • To size a generator, add up the running watts of everything that can run at once and leave headroom for start-up surges.

Water

  • A 3-compartment sink with drainboards and a separate hand sink.
  • Hot and cold running water from a water heater.
  • A fresh water tank and a larger waste tank; plan the espresso machine's water line and filter.
  • Easy access to fill and drain tanks at your commissary or service area.

Equipment checklist

  • Espresso machine and grinder
  • Undercounter refrigerator for milk, plus freezer or ice storage
  • Shaved ice or slush machine if you sell frozen drinks
  • Counter space for cups, syrups and a POS station
  • Commercial (NSF or ETL listed) refrigeration

Our coffee and beverage trailers come with the sinks, tanks and outlets in place, and the TX-12 Color Edition includes a dedicated 240V 30 A espresso circuit.

Questions

Does a coffee trailer need a hood?

No hood or grease fire suppression is needed when there is no grease cooking. If you add cooking later, the rules for cooking trailers apply.

How big should the trailer be?

For two people, 11.5 to 13 ft is common for coffee, snow cones and drinks.
